Batumi-style coffee
The cezve sinks into scalding sand, the foam rises three times — coffee was brewed this way on this border of empires a century ago, and still is.
Batumi is a port city at a crossroads of cultures, and its coffee tradition is Turkish: a fine grind, a copper cezve, hot sand instead of a stove. Sand heats more evenly than flame, and the cup comes out dense without bitterness.
Look for coffee shops with a sand counter in the Old Town — the ritual alone is worth watching. A glass of cold water comes with the cup, and ideally, no hurry at all.
